Greens Provençale

1 lb. Braising greens (or kale )

1 medium onion

1 clove garlic

butter

2 egges – beaten

1 cup Parmesan cheese – grated

salt, black pepper, olive oil

 Chop the onion and mince the garlic.  Heat olive oil in a very large kettle; saute onion and garlic till transparent.  Chop and add the greens and cover tightly.  In about 5 minutes, when the greens are reduced to a fraction of their former bulk, stir to incorporate the oil and onions.  Cook a few minutes longer and remover from the heat.

When the greens have cooled slightly, stir in 2 beaten eggs and ½ cup of grated parmesan. Season with salt and pepper to taste.  Pour mixture into meduim-size buttered baking dish.  Sprinkle remaining Parmesan over the top and dot with butter.

 Bake at 375º for 15 minutes and serve steaming hot.
