2 Tbs oil                 half an onion – chopped       3 cloves of garlic -chopped
a knob of fresh ginger – chopped                       1 tsp coriander – ground
1/2 tsp turmeric       cayenne to taste                optional: garam masala
1/2 pound chard       1/3 cup water                    salt to taste
1/3 cup yogurt

Directions: In a large saucepan or frying pan, saute onion in oil. Add garlic, ginger, and spices and stir them around for a few minutes.
Chop greens and add them to the pan with the water and salt and bring to a boil. Reduce to simmer for a few minutes.
Let cool a while, then dump it in a blender and process. Add the yogurt and whirl it a little. Put it back in the pot over low heat a few minutes to warm it up again.

Saag goes well with rice and lamb or many Indian dishes; it’s also good with your scrambled eggs next morning.
