Red lentil & Kale Soup

You’ll need:
2 carrots, diced
1 onion, diced
3 gloves of garlic, coarsely chopped
little bit of olive oil
1 tbls cumin
1 tbls coriander
1 tbls oregano
1 tbls tomato paste
1 jalapeno or dried hot pepper
1 lemon
1 cup of red lentils
3 cups of chicken or vegetable broth
1 bunch of kale
2 beef hot dogs (optional)
Sour Cream
Cilantro

Sautee carrots and onion in olive oil over low heat
Add garlic
Add spices, jalapeno and tomato paste and zest of lemon Sautee another 5 minutes
Add lentils, bring up heat, stir
Add broth, bring to a boil, then lower heat
Add kale, simmer for 15 minutes
Add sausages and juice of lemon, simmer until sausages are hot.
Serve with dollop of sour cream and cilantro to taste.
Excellent drizzly weather soup, which tastes better the second or third day.
